This is a great comfort food for breakfast or a quick dinner. Add extra salsa for some kick.

  • 1 Large bowl
  • 1 10" ovenproof skillet

Ingredients

  • 6 ea Eggs
  • 3 ea Egg whites
  • 1/4 cup Salsa
  • 1 Tbsp Fresh parsley
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 Tbsp Olive oil
  • 1 ea Green pepper, chopped
  • 1 ea Sweet red pepper, chopped
  • 3 ea Green onions, chopped
  • 2 ea Garlic cloves, minced
  • 16 oz Black beans, drained and rinsed
  • 1/2 cup White cheddar cheese, shredded

Instructions

  • Preheat the broiler
  • In a large bowl whisk the eggs, egg whites, salsa, parsley, salt, and pepper
    6 ea Eggs, 3 ea Egg whites, 1/4 cup Salsa, 1 Tbsp Fresh parsley, 1/4 tsp Salt, 1/4 tsp Pepper
  • In a 10-in. ovenproof skillet, heat oil over medium-high heat. Add peppers and green onions; cook and stir 3-4 minutes
    1 Tbsp Olive oil, 1 ea Green pepper, chopped, 1 ea Sweet red pepper, chopped, 3 ea Green onions, chopped
  • Add garlic; cook 1 minute longer.
    2 ea Garlic cloves, minced
  • Stir in beans. Reduce heat to medium; stir in egg mixture. Cook, uncovered, 4-6 minutes or until nearly set. Sprinkle with cheese.
    16 oz Black beans, drained and rinsed, 1/2 cup White cheddar cheese, shredded
  • Broil 3-4 in. from heat 3-4 minutes or until light golden brown and eggs are completely set. Let stand 5 minutes. Cut into wedges.
