Black Bean & White Cheddar Frittata
This is a great comfort food for breakfast or a quick dinner. Add extra salsa for some kick.

- 1 Large bowl
- 1 10" ovenproof skillet
Ingredients
- 6 ea Eggs
- 3 ea Egg whites
- 1/4 cup Salsa
- 1 Tbsp Fresh parsley
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp Olive oil
- 1 ea Green pepper, chopped
- 1 ea Sweet red pepper, chopped
- 3 ea Green onions, chopped
- 2 ea Garlic cloves, minced
- 16 oz Black beans, drained and rinsed
- 1/2 cup White cheddar cheese, shredded
Instructions
- Preheat the broiler
- In a large bowl whisk the eggs, egg whites, salsa, parsley, salt, and pepper6 ea Eggs, 3 ea Egg whites, 1/4 cup Salsa, 1 Tbsp Fresh parsley, 1/4 tsp Salt, 1/4 tsp Pepper
- In a 10-in. ovenproof skillet, heat oil over medium-high heat. Add peppers and green onions; cook and stir 3-4 minutes1 Tbsp Olive oil, 1 ea Green pepper, chopped, 1 ea Sweet red pepper, chopped, 3 ea Green onions, chopped
- Add garlic; cook 1 minute longer.2 ea Garlic cloves, minced
- Stir in beans. Reduce heat to medium; stir in egg mixture. Cook, uncovered, 4-6 minutes or until nearly set. Sprinkle with cheese.16 oz Black beans, drained and rinsed, 1/2 cup White cheddar cheese, shredded
- Broil 3-4 in. from heat 3-4 minutes or until light golden brown and eggs are completely set. Let stand 5 minutes. Cut into wedges.
