Heat oven to 400.
Place parchment cups into muffin pan.
In a medium bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
1 cup Cornmeal, 1-1/2 cup Flour, 1/4 cup Sugar, 2 tsp Baking powder, 1 tsp Salt
Whisk together the eggs, milk, melted butter, and vanilla in a large bowl.
2 ea Eggs, 1 cup Milk, 8 Tbsp Butter, melted, 1 tsp Vanilla extract
Combine the dry ingredients with the wet ones until they are incorporated.
Spoon the mixture into the muffin cups, filling them 2/3 of the way.
(Optional) Top the muffins with fruit (berries, banana, peach, pineapple, apple sauce.)
Bake for 15-17 minutes.
