Black Bean Bake
Cheesy and spicy, a great single pan dish

Equipment
- 1 10" ovenproof skillet
- 1 Cheese grater
Ingredients
- 3 Tbsp Olive oil
- 5 cloves Garlic, sliced
- 2 oz Tomato paste
- 1-1/2 tsp Paprika
- 1/4 tsp Red pepper flakes
- 1 tsp Cumin
- 28 oz Black beans, drained. Two cans
- 2 cups Water, boiling
- 6 oz Cheddar cheese, grated
Instructions
- Heat oven to 475 degrees
- Heat olive oil in a skillet over medium-high3 Tbsp Olive oil
- Fry the garlic until lightly golden, about 1 minute.5 cloves Garlic, sliced
- Stir in the paprika, tomato paste, red pepper flakes, and cumin, and fry for 30 seconds. Reduce heat as needed to prevent the garlic from burning.2 oz Tomato paste, 1-1/2 tsp Paprika, 1/4 tsp Red pepper flakes, 1 tsp Cumin
- Add the beans, water, and generous pinches of salt and pepper. Stir to combine.28 oz Black beans, drained., 2 cups Water, boiling
- Sprinkle the cheese evenly over the top and bake until the cheese has melted, about 5 to 10 minutes.6 oz Cheddar cheese, grated
