Equipment

  • 1 10" ovenproof skillet
  • 1 Cheese grater

Ingredients

  • 3 Tbsp Olive oil
  • 5 cloves Garlic, sliced
  • 2 oz Tomato paste
  • 1-1/2 tsp Paprika
  • 1/4 tsp Red pepper flakes
  • 1 tsp Cumin
  • 28 oz Black beans, drained. Two cans
  • 2 cups Water, boiling
  • 6 oz Cheddar cheese, grated

Instructions

  • Heat oven to 475 degrees
  • Heat olive oil in a skillet over medium-high
    3 Tbsp Olive oil
  • Fry the garlic until lightly golden, about 1 minute.
    5 cloves Garlic, sliced
  • Stir in the paprika, tomato paste, red pepper flakes, and cumin, and fry for 30 seconds. Reduce heat as needed to prevent the garlic from burning.
    2 oz Tomato paste, 1-1/2 tsp Paprika, 1/4 tsp Red pepper flakes, 1 tsp Cumin
  • Add the beans, water, and generous pinches of salt and pepper. Stir to combine.
    28 oz Black beans, drained., 2 cups Water, boiling
  • Sprinkle the cheese evenly over the top and bake until the cheese has melted, about 5 to 10 minutes.
    6 oz Cheddar cheese, grated
