A tomato-based salsa that is easy to make and may be extended by adding other ingredients like pineapple, avocadoes, and whatever you desire.

Equipment

  • 1 Food processor (large)

Ingredients

  • 1/2 cup White onion, roughly chopped
  • 1 clove Garlic, roughly chopped
  • 1/2 ea Jalapeno with ribs and seeds removed, roughly chopped
  • 10 oz Canned diced tomatoes with chilis
  • 14.5 oz Canned fire-roasted diced tomatoes
  • 1/4 tsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Cumin
  • 1/2 cup Fresh cilantro, roughly chopped
  • 1/2 ea Lime, juiced

Instructions

  • Add the onion, garlic, and jalapeno to a food processor and pulse until the onion is about 1/4" in size.
    1/2 cup White onion, roughly chopped, 1 clove Garlic, roughly chopped, 1/2 ea Jalapeno with ribs and seeds removed, roughly chopped
  • Drain the fluid from the can of diced tomatoes with green chilis and add to the food processor.
    10 oz Canned diced tomatoes with chilis
  • Add the fire-roasted diced tomatoes with juices to the food processor along with the sugar, salt, cumin, cilantro, and lime juice.
    14.5 oz Canned fire-roasted diced tomatoes, 1/4 tsp Sugar, 1/4 tsp Salt, 1/4 tsp Cumin, 1/2 cup Fresh cilantro, roughly chopped, 1/2 ea Lime, juiced
  • Pulse the mixture in the food processor until the desired consistency.
  • Taste the salsa and add sugar, salt, and lime as desired.
