Cornbread Muffins
This simple and delicious recipe for Cornbread Muffins is easy and creates moist muffins. You can easily add your choice of fruit to the tops or mix berries into the batter. These are perfect anytime of day.

- 1 Muffin pan with 12 cups
- 12 Parchment paper muffin cups
- 1 Medium bowl
- 1 Large bowl
Ingredients
- 1 cup Cornmeal
- 1-1/2 cup Flour
- 1/4 cup Sugar
- 2 tsp Baking powder
- 1 tsp Salt
- 2 ea Eggs
- 1 cup Milk
- 8 Tbsp Butter, melted
- 1 tsp Vanilla extract
Instructions
- Heat oven to 400.
- Place parchment cups into muffin pan.
- In a medium bowl, combine the cornmeal, flour, sugar, baking powder, and salt.1 cup Cornmeal, 1-1/2 cup Flour, 1/4 cup Sugar, 2 tsp Baking powder, 1 tsp Salt
- Whisk together the eggs, milk, melted butter, and vanilla in a large bowl.2 ea Eggs, 1 cup Milk, 8 Tbsp Butter, melted, 1 tsp Vanilla extract
- Combine the dry ingredients with the wet ones until they are incorporated.
- Spoon the mixture into the muffin cups, filling them 2/3 of the way.
- (Optional) Top the muffins with fruit (berries, banana, peach, pineapple, apple sauce.)
- Bake for 15-17 minutes.
