Equipment

  • 1 12-inch oven-safe deep skillet

Ingredients

  • 1 Tbsp Olive oil
  • 10 oz Mirepoix Chopped carrots, onion, and celery
  • 2 cloves Garlic, minced
  • 3 cans White beans, drained and rinsed 15 oz cans
  • 1 can Crushed tomatoes with basil 28 oz can
  • 1 tsp Italian seasoning
  • 1 cup Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • 1 loaf Crusty French bread, sliced for serving

Instructions

  • Preheat oven to 450°F.
  • In a 12-inch oven-safe deep skillet, heat the oil on medium. Add the mirepoix and cook 6–8 min., until softened, stirring occasionally. Add the garlic and cook for 30 sec.
    1 Tbsp Olive oil, 10 oz Mirepoix, 2 cloves Garlic, minced
  • In the skillet, stir in the beans, crushed tomatoes, and Italian seasoning. Season with salt and pepper. Bring to a boil, then reduce to a simmer. Cook for 10 min.
    3 cans White beans, drained and rinsed, 1 can Crushed tomatoes with basil, 1 tsp Italian seasoning
  • Sprinkle the mozzarella and Parmesan over the skillet. Bake 10 min., until cheese is melted. Serve with the bread.
    1 cup Mozzarella cheese, shredded, 1/4 cup Parmesan cheese, shredded, 1 loaf Crusty French bread, sliced for serving
