Pizza Beans
Get all the classic flavors of a pizza with the added fiber and protein of creamy beans. This one-skillet recipe is a quick dinner.

- 1 12-inch oven-safe deep skillet
Ingredients
- 1 Tbsp Olive oil
- 10 oz Mirepoix Chopped carrots, onion, and celery
- 2 cloves Garlic, minced
- 3 cans White beans, drained and rinsed 15 oz cans
- 1 can Crushed tomatoes with basil 28 oz can
- 1 tsp Italian seasoning
- 1 cup Mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, shredded
- 1 loaf Crusty French bread, sliced for serving
Instructions
- Preheat oven to 450°F.
- In a 12-inch oven-safe deep skillet, heat the oil on medium. Add the mirepoix and cook 6–8 min., until softened, stirring occasionally. Add the garlic and cook for 30 sec.1 Tbsp Olive oil, 10 oz Mirepoix, 2 cloves Garlic, minced
- In the skillet, stir in the beans, crushed tomatoes, and Italian seasoning. Season with salt and pepper. Bring to a boil, then reduce to a simmer. Cook for 10 min.3 cans White beans, drained and rinsed, 1 can Crushed tomatoes with basil, 1 tsp Italian seasoning
- Sprinkle the mozzarella and Parmesan over the skillet. Bake 10 min., until cheese is melted. Serve with the bread.1 cup Mozzarella cheese, shredded, 1/4 cup Parmesan cheese, shredded, 1 loaf Crusty French bread, sliced for serving
